At all stages throughout the cycle of food production, whether in agriculture, the supply chain or even the home, microorganisms must be considered.

In food processing the principal method for controlling biofilms is through the use of effective but often costly hygiene practices. When these measures and practices fail there can be a significant impact on human health, with outbreaks of food poisoning causing morbidity and mortality.
